Chocolate Chip Cookies
Soft, chewy chocolate chip cookies with crisp edges, plenty of chocolate, and easy options for reducing sugar or changing the flour.
Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup semisweet chocolate chips
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar until smooth and creamy.
- Add the egg and vanilla extract and mix until fully combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture and stir just until combined.
- Fold in the chocolate chips.
- Scoop the dough into 12 evenly sized portions and place them about 2 inches apart on the prepared baking sheet.
- Bake for 9–11 minutes, until the edges are lightly golden but the centers still look slightly soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Smart Substitutions
Reduce the sugar: Replace some or all of the granulated sugar with an allulose or erythritol-based sweetener suitable for baking. Texture and browning may change depending on the sweetener used.
Change the flour: Almond flour can be used in a recipe specifically formulated for almond flour, but it is not a direct 1:1 replacement for all-purpose flour in this recipe.
Lower the added sugar: Use sugar-free or reduced-sugar chocolate chips.
Control portions: Make smaller cookies and reduce the baking time slightly for a lower-calorie portion.
Storage & Reheating
Room Temperature: Store cooled cookies in an airtight container for up to 4 days.
Freezer: Freeze baked cookies for up to 2 months, or freeze portioned cookie dough and bake from frozen with an extra 1–2 minutes of baking time.
Reheating: Warm an individual cookie in the microwave for about 10 seconds if you prefer a softer texture.
