Ingredients

  • 1 tablespoon olive oil
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 5 oz fresh baby spinach
  • 6 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 cup shredded Swiss cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F. Lightly grease a 9-inch pie dish.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the mushrooms and cook for 5–6 minutes, until softened and lightly browned.
  4. Add the garlic and cook for about 30 seconds.
  5. Add the spinach and cook for 1–2 minutes, stirring until wilted. Remove from the heat and allow any excess moisture to evaporate.
  6. Spread the mushroom and spinach mixture evenly in the prepared pie dish.
  7. Sprinkle the Swiss cheese over the vegetables.
  8. In a medium bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder.
  9. Pour the egg mixture evenly over the vegetables and cheese.
  10. Sprinkle the Parmesan cheese over the top.
  11. Bake for 30–35 minutes, until the center is set and the top is lightly golden.
  12. Let stand for 5–10 minutes before slicing and serving.

Why crustless works: Skipping the traditional pastry crust eliminates most of the flour-based carbohydrates while keeping the creamy egg-and-cheese filling.
