Crustless Spinach & Mushroom Quiche
A savory crustless quiche packed with spinach, mushrooms, eggs, and melted cheese for an easy lower-carb breakfast, lunch, or dinner.
Ingredients
- 1 tablespoon olive oil
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 5 oz fresh baby spinach
- 6 large eggs
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 cup shredded Swiss cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F. Lightly grease a 9-inch pie dish.
- Heat the olive oil in a large skillet over medium heat.
- Add the mushrooms and cook for 5–6 minutes, until softened and lightly browned.
- Add the garlic and cook for about 30 seconds.
- Add the spinach and cook for 1–2 minutes, stirring until wilted. Remove from the heat and allow any excess moisture to evaporate.
- Spread the mushroom and spinach mixture evenly in the prepared pie dish.
- Sprinkle the Swiss cheese over the vegetables.
- In a medium bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder.
- Pour the egg mixture evenly over the vegetables and cheese.
- Sprinkle the Parmesan cheese over the top.
- Bake for 30–35 minutes, until the center is set and the top is lightly golden.
- Let stand for 5–10 minutes before slicing and serving.

Why crustless works: Skipping the traditional pastry crust eliminates most of the flour-based carbohydrates while keeping the creamy egg-and-cheese filling.
Change the cheese: Mozzarella, cheddar, Gruyère, or Monterey Jack can replace the Swiss cheese.
Add more protein: Cooked bacon, diced ham, sausage, or shredded chicken can be added before baking.
