Golden Herb Parmesan Bread Slices

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 cup buttermilk
  • 1/4 cup olive oil
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons grated Parmesan cheese, for topping

Instructions

  1. Preheat oven to 350°F. Lightly grease an 8 1/2 × 4 1/2-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder, and Italian seasoning.
  3. Stir in 1/2 cup Parmesan cheese.
  4. In a separate bowl, whisk together the eggs, buttermilk, and olive oil.
  5. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
  6. Fold in the fresh parsley.
  7. Transfer the batter to the prepared loaf pan and smooth the top.
  8. Sprinkle the remaining 2 tablespoons Parmesan cheese over the top.
  9. Bake for 40–45 minutes, until the top is golden and a toothpick inserted into the center comes out clean.
  10. Cool in the pan for about 10 minutes, then transfer the loaf to a wire rack.
  11. Allow to cool slightly before slicing and serving.

Smart Substitutions

Add more fiber: Replace up to half of the all-purpose flour with whole-wheat flour. The loaf will be slightly denser with a heartier flavor.

Lower the carbs: Almond flour cannot replace the all-purpose flour 1:1 in this recipe. For a substantially lower-carb bread, use a recipe specifically formulated for almond flour.

No buttermilk: Combine 1 cup milk with 1 tablespoon lemon juice or white vinegar. Let stand for 5–10 minutes before using.

Change the herbs: Fresh rosemary, thyme, chives, or basil can be used in place of or alongside the parsley.

Freezer: Wrap individual slices and freeze for up to 3 months.
